For many, summer is the most beautiful part of the year. How do you tolerate summer heat and what to eat in summer to cool and refresh? When it is hot and you are sweating excessively, you should not enjoy heavy and greasy food. It gets stuck in the stomach and weighs him heavily. In addition, some foods slow down digestion and speed up sweating, which increases the risk of dehydration. Fresh and light food cools our body, refreshes us and provides us with an extra amount of liquid.

This time, I prepared 3 recipes for divine summer salads, which are a rich source of vitamins, minerals, fiber and protein.

The lentils salad

Ingredients for 4 people

  • 1 cup of lentils (brown or green)
  • 2 carrots
  • 2 medium-sized tomatoes
  • 1 small can of sweet corn
  • 120 g of mozzarella
  • 1 hard-boiled egg
  • 5-6 radishes
  • pepper
  • olive oil
  • balsamic vinegar
  • Organic Provence herb salt
  • green parsley
  • basil

Soak the lentils in water for the night to shorten the cooking time. Before cooking, pour fresh water in the pot. Cook for about 40 minutes. At the end of cooking, season it with Organic Provence herb salt. Cook carrots and eggs and cut them into small cubes. Also cut tomatoes, radishes and mozzarella.

When the lentil is cooked, drain it and allow it to cool. Then add all the ingredients. Season with Organic Provence herb salt, pepper, a bit of finely chopped parsley and fresh basil, olive oil and balsamic vinegar. At the end, mix everything together and enjoy a refreshing and nutritious summer salad.

Greek salad

Ingredients for 2 people

  • 10 thick black olives
  • 4 tomatoes
  • 1 cucumber
  • 1 red or green pepper
  • 1 red onion
  • 20 dag fetta cheese
  • Olive oil, vinegar
  • Oregano
  • Organic Provence salt
  • Black pepper

Wash the vegetables. Cut the vegetables and fetta cheese into cubes. Add the olives and sprinkle the salad generously with olive oil, add some vinegar and season it with Bio Provence salt, freshly ground pepper and oregano.

Chicken salad

Ingredients for 1 person

  • A mixture of Organic hemp salt and red powdered peppers for seasoning the chicken
  • The upper part of the chicken thighs
  • 1 can of sweet corn
  • Lettuce
  • 5 cherry tomatoes
  • 60 g of mozzarella
  • 1 egg
  • 1 tablespoon of olive oil

Dressing:

  • Sunflower oil
  • Wine vinegar
  • Parsley
  • Ground black pepper
  • Organic Provence salt
  • Red balsamic vinegar
  • 1 teaspoon of mustard

Cut the chicken meat into strips and season with a mixture of Organic hemp salt and powdered pepper. Prepare the lettuce, corn, cherry tomatoes and cut mozzarella into cubes. Cook and finely chop the eggs.
Prepare a dressing: sunflower oil, vinegar, freshly chopped parsley, ground black pepper, Organic Provence salt, red balsamic vinegar and a spoonful of mustard. Mix well. Fry the chicken on olive oil. Put the vegetables in a bowl, pour the dressing over and mix. On top of the salad place mozzarella, cherry tomatoes, fried meat and eggs. This salad is perfect with wholemeal bread.
